This course will introduce you to the art of bread making without added yeasts (though we might add some yeast for the purpose of reducing the rising time to be able to bake our bread on the course).
On this course you will:
learn about the benefits of Sourdough Bread
make your own sourdough starter to take home
work with a sourdough starter and learn all the steps to turn a starter into a delicious loaf of traditional German Sourdough Bread
learn two different techniques (knead and no knead technique) on how to work with sourdough
get an idea and watch how to make a gluten free starter and understand how to work with it (we will not go into the details of baking gluten free breads)
bake together and sample a loaf of bread
find out what you can do with your surplus sourdough as an alternative to dispatching it. Try out two recipes – a savoury and a sweet recipe – using the sourdough that would usually be discarded and sample them for lunch!
go home with lots of handouts full of the knowledge that will help you to practise at home what you learnt at the course!
All ingredients will be vegan. The breads are made out of a mix of rye and wheat flour.
Please get in contact beforehand if you have any special dietary requirements.
Your tutor, Peggy, runs the local business Eldertree, specialising in fermented and whole foods.
Fee:£65(+ £8, payable on arrival to the tutor in cash to cover ingredients).
