Learn about the different ways you can extend the life of fruit, vegetables and grains to preserve food at home to make the most of an abundant harvest. Join this hands on event where we will be exploring a variety of different preserving methods and how to use them for your own food preserving needs.
This course will introduce you to food preservation and we will try out time honoured techniques such as salting, pickling, fermenting, candying and dehydrating which all have a place in modern kitchens alongside techniques such as freezing. It will also include tasting the recipes we are making.
We will be having a go at making a jam or jelly, a curd, a ferment, a chutney or relish, a pickle, a sauce, a preserve in oil, dehydrated fruit or veg and candied fruits.
We will be looking at a variety of different fruit such as raspberries, blackberries and apples, and vegetables such as courgettes, brassicas, peppers, chili peppers and tomatoes, to name just a few. Please bring any fruit or veg you have an abundance of, whether they are from your own garden produce or grade out from a shop.
Under Peggy’s guidance we will share knowledge and find new and old recipes for our fruit and veg, to extend their shelf life and give them a fresh lease of life. If you have a favourite recipe, please bring that along too to share with the group, and perhaps a favourite homemade preserve for everyone to sample if you have some.
You will leave this course with fresh ideas and a bundle of recipes to carry on your own preserving journey at home, adapted to your own needs.
